Winemaking
All varieties are co-fermented together. Grapes are destemmed and gently pressed; the resulting juice is left to settle at low temperature overnight, then racked the next day into stainless steel tanks. To preserve its aromatics, the must is kept below 21°C at night and fermented with wild yeast for about three weeks, followed by malolactic fermentation carried out by wild lactic bacteria. The wine is then aged in stainless steel tanks for about 5–6 months, after which it is racked, blended, and filtered.
