Ripe grapes are sorted, and only the best bunches are destemmed and lightly crushed; a portion undergoes carbonic maceration. The must is placed in stainless steel tanks and encouraged to ferment gradually, starting at a low temperature, with pump-overs performed as the must is slowly warmed. Fermentation begins naturally with wild yeast after two to three days. After about ten days of maceration, the wine is pressed. The wine is then transferred to oak barrels and stainless steel tanks, where malolactic fermentation is carried out by wild lactic bacteria, and aged for about 5–6 months in oak barrels, oak tanks, and stainless steel tanks. After racking, it is filtered without fining, and bottled.
