Free‑run juice of Kerner (97%) and Sylvaner (3%) was fermented in stainless steel for about a month, while gently pressed juice plus destemmed skins underwent maceration in plastic tanks for a month; after pressing, the wine completed malolactic fermentation in stainless steel.
