Farming & winemaking

Winemaking

Whole cluster carbonic maceration for 1 month. The grapes were then destemmed and crushed, pressed in a balloon press and fermented in stainless steel tanks. Bottling was done just before the end of fermentation to create a pet-nat style wine. No added sulfites.
